No-knead bread

lately, i have been baking bread for the house.
i like mostly the rhythmic punching down
the tenacity of the yeast in the dough
the smooth, soft surface
and the way i braid it into pieces and
watch through the little oven door
for the rising to start
and the edges to turn
it is simply too much fun
besides, i get praised for it most of the time.
